Rainy-day Onion Soup
With its rich broth, sweet onions, and also only the ideal amount of gooey cheese, this particular soup will warm you into a core after having a cool, freezing run. It also offers the carbs and protein you have to re cover. Makes 4 servings.
3 Tbsp. Ground black pepper
4 pieces (1/2") whole wheat baguette
1 cup shredded Swiss cheese
At a huge skillet, heat the oil over medium-high heat. Insert the coriander, onions, and bay leaf. Cook for 15 minutes, stirring occasionally, until caramelized and very soft.
Add the sherry and scratch the browned pieces from the bottom of the pan. When evaporated, add the broth and bring to a boil. Decrease heat to low and simmer for five full minutes. Add the pepper and salt.
Place an oven rack 4" from heat and preheat the broiler to high. Put the bread slices on the baking sheet and top each with 2 Tbsp. cheese. Broil for 2 1/2 minutes or until the bread is toasted and the cheese is gold.
Place Two Tbsp. Cheese in the bottom of four bowls that are small. Discard the bay leaf out of your soup. Ladle the soup into the dishes. Leading each with 1 particular skillet.
